Black Bean Salsa
This is quick and easy dish which is a must in summer time or picnic time. Ingredients
- 1 cans ( 15 oz.) black beans (drained and rinsed)
- 2 lg. tomatoes (diced)
- 1 red onion ( finely diced)
- 1-2 jalapeno peppers ( seeded and diced fine)
- 1 green pepper ( seeded and diced fine)
- 1 17 oz.. frozen corn
- 1/2 tsp. cumin
- 3 pieces chopped cilantro
- 1 T. lime juice
- 1 cup Balsamic Vinaigrette dressing
Directions
- Partially cook corn, drain and set aside
- Combine all ingredients.
- Let stand for about 20 minutes to allow the flavors to combine
- Serve as a scoop dip or salad
