Black bean and Pork slowcooker chili

This is adapted from an award winning chili recipe. It's easy to make and delicious! Not too spicy, so your whole family can enjoy it!

Ingredients

  • 1 1/2 pounds pork tenderloin, roast, or shoulder, cut into 1 inch cubes
  • 1 medium onion, coarsely chopped
  • 1 red bell pepper, coarsely chopped
  • 3 (15 ounce) cans black beans 3 cups dried beans soaked overnight
  • 1 (16 ounce) jar salsa (medium or hot)
  • 1/2 cup vegetable broth
  • 1 teaspoon dried oregano
  • 1.5 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 pinch cayenne (add more if you like!)
  • 1 bunch cilantro
  • 1 avocado diced

Directions

  1. Combine pork tenderloin, onion, red pepper, black beans, salsa, chicken broth, oregano, cumin, and chili powder in a slow cooker. Set to Low and cook for 7 to 9 hours.
  2. Break up pieces of cooked pork to thicken the chili before serving.
  3. Serve with cilantro and diced avocado on the side
