Beans Vinaigrette

Ingredients

  • 1 pkg. Italian green beans
  • 1/3 c. minced onion
  • 2 cloves garlic, chopped
  • 1 tbsp. red wine vinegar
  • 1 teaspoon Dijon style mustard
  • 2 tbsp. parsley
  • 3 tbsp. vegetable oil

Directions

  1. Cook beans according to package directions, adding onion to cook with the beans.
  2. Mix together garlic, red wine vinegar, mustard, and parsley. Add in oil 1 Tbsp. at a time, mixing well between each Tbsp.. Drain beans and onions, stir in vinegar mix till beans are coated. Let stand for 5 min.
