Banana Oatmeal Cookies With Banana Frosting

Ingredients

  • 3/4 c. Butter flavor crisco
  • 1 c. Sugar, brown firmly packed
  • 1 x Egg
  • 1 c. Bananas, mashed ripe (2 to 3)
  • 1 3/4 c. Oats, quick not instant or possibly Old fashioned
  • 1 1/2 c. Flour all purpose
  • 1 tsp Salt
  • 1 tsp Cinnamon
  • 1/2 tsp Baking soda
  • 1/4 tsp Nutmeg
  • 1/2 c. Walnuts coarsely minced frosting [ opti onal
  • 2 Tbsp. Butter flavor crisco
  • 1/4 c. Bananas mashed
  • 1 tsp Lemon juice
  • 2 c. Sugar confectioners Walnuts finely minced opt.

Directions

  1. Preparation Time: 20 Min
  2. Bake Time: 15 to 17 Min
  3. Heat oven to 350 F. Grease baking sheet with Butter Flavor Crisco.
  4. Set aside.
  5. Cream 3/4 c. Butter Flavor Crisco and brown sugar in large bowl at medium speed of electric mixer till well blended. Beat in egg. Add in 1 c. mashed bananas. Mix till creamy.
  6. Combine oats, flour, salt cinnamon, baking soda and nutmeg. Stir into creamed mix. Fold in 1/2 c. nuts. Drop 2 level measuring tablespoonfuls of dough into a mound to create each cookie. Place 2 inches apart on baking sheet.
  7. Bake at 350 for 15 to 17 min. Cold 1 minute on baking sheet.
  8. Remove to cooling rack. Cold completely.
  9. For frosting, Cream 2 Tbsp. Butter Flavor Crisco, 1/4 c. mashed bananas and lemon juice. Add in confectioners sugar. Beat till smooth. Frost cooled cookies. Sprinkle with finely minced walnuts, if you like.
  10. Makes 5 dozen 2 inch cookies.
