Ingredients

  • 1 lrg Ripe banana, (about 8 ounces)
  • 2 x Large eggs
  • 1/2 c. Lowfat milk
  • 1/2 tsp Grnd cinnamon
  • 4 slc Whole wheat bread
  • 3 Tbsp. Butter Maple syrup

Directions

  1. Blend first 4 ingredients in processor till smooth. Transfer to 13x9-inch pan. Place bread in lowfat milk mix and soak till all liquid is absorbed, turning bread occasionally, about 20 min.
  2. Heat butter in heavy large skillet over medium heat. Add in bread and cook till golden, about 3 min per side. Serve; pass syrup separately.
  3. Serves 2.
