Baked Stuffed Brie


This baked brie was originally going to be an appetizer but when it was ready to eat it turned into a nice brunch. The inside was filled with artichokes, basil and sun-dried tomatoes in oil and homemade pita chips. The chips are very easy to make. Cut a piece of pita into triangles and place on a baking sheet. Spray them with olive oil and add seasoned salt, garlic powder and pepper. Bake for about 10 minutes at 400 degrees. We sat outside on a beautiful Sunday afternoon and topped it off with a nice crisp chilled sauvignon blanc.

Ingredients

  • 8 oz round brie
  • 1 cup chopped artichokes
  • 1 tablespoon minced basil
  • 1/4 cup julienned sundried tomatoes, drained of the oil
  • 2 cloves garlic minced

Directions

  1. Preheat the oven to 350 degrees.
  2. Mix all the ingredients except the brie in a bowl.
  3. Cut the brie in half lengthwise.
  4. Place the filling on one half of the brie and then put the top on. Place in a baking dish and bake for 15 minutes.
