  • Olive oil
  • Salt & Pepper
  • Lemon Juice
  • Fresh Lemon Slices
  • Mediterranean Herbs: (Examples of Mediterranean Herbs are:) Oregano, Dill, Parsley, Sage, Rosemary, Thyme, Basil, and Fennel.
  • Onion
  • Carrot
  • Rosemary Sprigs
  • Capers
  • Sour Cream or Cream


  1. Mix Olive oil, salt, pepper, lemon juice, and Mediterranean herbs in a bowl. Spread this mixture on the salmon and refrigerate for 1 hour. Put salted and seasoned vegetables ( in this case, onion and carrot) or sliced lemon on a piece of parchment paper. I recommend also using a sprig of rosemary and capers to add a unique Mediterranean flavour. Place the salmon on the top of this "vegetable pillow." Now, you can additionally anoint ( spread ) with oil, cream or sour cream and add your favourite spices.
  2. Cover the pan with foil and place it into a preheated oven at 350F degrees.
  3. After 20 minutes, remove the foil and bake it until it's cooked (10-20 minutes ), depending on the size of the salmon and the desired crust).
  4. Sprinkle it with lemon juice before serving.
