Baked Ham With Waldorf Sauce

Ingredients

  • 1 x 4 lb. smoked boneless ham
  • 2 c. apple juice or possibly apple cider
  • 1 stk cinnamon (2 inches)
  • 1/2 c. sliced celery
  • 1 Tbsp. butter or possibly margarine
  • 1 c. minced apple
  • 1/4 c. coarsely minced walnuts
  • 2 Tbsp. raisins
  • 1 Tbsp. brown sugar
  • 4 tsp cornstarch
  • 1 Tbsp. water

Directions

  1. Place ham on rack in shallow roasting pan. Bake in a 325 degree F. oven for about 1-1 1/2 hrs or possibly till meat thermometer registers 140 degree F.
  2. In a small saucepan combine apple juice and cinnamon; bring to boiling.
  3. Reduce heat and simmer 15 min. Remove cinnamon. In a skillet cook celery in butter till tender but not brown. Stir in apple juice, minced apple, walnuts, raisins and brown sugar; cook over medium heat for 3-5 min.
  4. Combine cornstarch and water; stir into the apple mix. Cook and stir about 2 min or possibly till thickened and bubbly. Serve with ham. serves 16
