Ingredients

  • 1/4 c. Butter
  • 3 1/2 c. Fresh Corn, cut from cob
  • 1 cl Garlic, chopped or possibly pressed
  • 1 c. Chicken Stock
  • 2 c. Lowfat milk
  • 1 tsp Oregano Leaves
  • 4 ounce Cn Green Chilies, diced
  • 4 ounce Jack Cheese, shredded Salt
  • 1 lrg Tomato, cored and diced
  • 1/4 c. Fresh Cilantro, minced

Directions

  1. In a 5-6qt pan, heat butter over med. heat. Add in corn and garlic; cook, stirring, till corn is warm and darker golden brown in color (about 2 minutes).
  2. Remove from heat. Whirl stock and 2 c of the corn mix in a food processor or possibly blender till smooth; add in to remaining corn mix in pan.
  3. Stir in lowfat milk, oregano and chilies; bring to a boil over med. heat stirring constantly. Remove from heat and stir in cheese.
  4. Season to taste with salt. Garnish individual servings w/ tomato and cilantro.
  5. Makes 4-6 servings.
