Ingredients

  • 2 Tb. extra virgin olive oil
  • 1 bag jumbo shrimp 21/25 count, peeled and deveined
  • 4 cloves garlic, minced
  • 3 Tb. chopped mint or basil or a mixture of both
  • 1 large mango, peeled and diced
  • ¼ C. each diced red onion and celery
  • 2 Tb. lime juice
  • 1 tsp. minced fresh ginger
  • ½ tsp. granulated sugar
  • pinch of kosher salt
  • ¼ tsp. Sriracha
  • Lemon or lime wedges
  • 2 C. mixed greens

Directions

  1. Heat oil in skillet over medium heat and cook shrimp, garlic and 2 Tb. of the herbs. Stir often for about 3 minutes or until shrimp are pink and firm to the touch.
  2. Combine shrimp, mango, onion and celery in a bowl.
  3. In a small bowl, whisk together lime juice, ginger and sugar and drizzle over shrimp mixture and toss to coat.
  4. Place a small amount of the mixed greens among large martini glasses and top with shrimp mixture. Garnish with either a lemon or lime wedge.
