Avocado & Shrimp Martini
Ingredients
- 2 Tb. extra virgin olive oil
- 1 bag jumbo shrimp 21/25 count, peeled and deveined
- 4 cloves garlic, minced
- 3 Tb. chopped mint or basil or a mixture of both
- 1 large mango, peeled and diced
- ¼ C. each diced red onion and celery
- 2 Tb. lime juice
- 1 tsp. minced fresh ginger
- ½ tsp. granulated sugar
- pinch of kosher salt
- ¼ tsp. Sriracha
- Lemon or lime wedges
- 2 C. mixed greens
Directions
- Heat oil in skillet over medium heat and cook shrimp, garlic and 2 Tb. of the herbs. Stir often for about 3 minutes or until shrimp are pink and firm to the touch.
- Combine shrimp, mango, onion and celery in a bowl.
- In a small bowl, whisk together lime juice, ginger and sugar and drizzle over shrimp mixture and toss to coat.
- Place a small amount of the mixed greens among large martini glasses and top with shrimp mixture. Garnish with either a lemon or lime wedge.
