Avocado, melon and bean salad

It is a very refreshing salad which combines ingredients from Africa and the Latin America

Ingredients

  • 1 large ripe avocado, peeled, stoned, and diced
  • ½ cantaloupe melon, peeled, seeded, and diced
  • 150 grams/6 ounces cooked pinto beans
  • 1 small red onion, chopped
  • 1 red chilli, seeded and finely chopped
  • 1 tablespoon lime juice
  • 1 tablespoon extra virgin olive oil
  • 50 grams/2 ounces chorizo, cut into very thin slices
  • Salt and black pepper, to taste

Directions

  1. In a large bowl, place the avocado, melon, beans, onion, chilli, lime juice, and olive oil, and mix together.
  2. In a dry frying pan, over medium heat, toast the chorizo slices, and, when crisp, pat them dry with kitchen paper and reserve.
  3. Stir in the olive oil, and season with salt and pepper.
  4. Divide the avocado/melon/bean mixture between 4 serving plates.
  5. Place the chorizo pieces on top of the mixture on each plate.
  6. Serve cold as a starter/appetiser or side dish.
