Avocado, melon and bean salad

- 1 large ripe avocado, peeled, stoned, and diced
- ½ cantaloupe melon, peeled, seeded, and diced
- 150 grams/6 ounces cooked pinto beans
- 1 small red onion, chopped
- 1 red chilli, seeded and finely chopped
- 1 tablespoon lime juice
- 1 tablespoon extra virgin olive oil
- 50 grams/2 ounces chorizo, cut into very thin slices
- Salt and black pepper, to taste
Directions
- In a large bowl, place the avocado, melon, beans, onion, chilli, lime juice, and olive oil, and mix together.
- In a dry frying pan, over medium heat, toast the chorizo slices, and, when crisp, pat them dry with kitchen paper and reserve.
- Stir in the olive oil, and season with salt and pepper.
- Divide the avocado/melon/bean mixture between 4 serving plates.
- Place the chorizo pieces on top of the mixture on each plate.
- Serve cold as a starter/appetiser or side dish.
