Ingredients

  • 1 x Avocado
  • 1/2 c. Fresh lime juice
  • 1 c. Sugar
  • 1 pkt Unflavored gelatin
  • 1/4 tsp Salt
  • 3 x Large eggs, separated -- room temp
  • 1/2 c. Lowfat milk
  • 1 Tbsp. Grated lime peel
  • 1 x 9 inch baked pie shell Sweetened whipped cream

Directions

  1. Puree avocado with lime juice. In top of double boiler combine: 1/2 c. sugar, gelatin and salt. Beat egg yolks lightly with lowfat milk and stir in. Stir over boiling water till gelatin dissolves, about 5 min Remove from heat; stir in lime peel, then avocado puree. Refrigeratetill mix mounds slightly when dropped from a spoon.
  2. Beat egg whites, gradually adding remaining 1/2 c. sugar, till stiff, but not dry. Fold into avocado mix; turn into pie shell. Refrigeratetill hard.
