Ingredients

  • 10 sm new potatoes
  • 300 gm fresh asparagus
  • 24 x raw prawns, tails on, shelled
  • 2 Tbsp. minced fresh dill
  • 1 Tbsp. minced fresh mint
  • 2 tsp French mustard
  • 1 tsp sugar
  • 1/4 c. oil
  • 2 Tbsp. wine vinegar
  • 1/2 tsp salt Freshly grnd black pepper
  • 1 c. egg mayonnaise
  • 2 Tbsp. toasted sesame seeds

Directions

  1. Scrub potatoes and cut into thick slices.
  2. Place over the bottom of a frying pan. Pour over sufficient boiling water to just cover the potatoes. Bring to the boil and simmer till almost tender.
  3. Snap woody ends off asparagus and layer over potatoes.
  4. Place prawns on top of asparagus and cover pan for 5 min.
  5. Tip contents of frying pan into a colander and drain well.
  6. Place dill, mint, mustard, sugar, oil, vinegar, salt, pepper and mayonnaise in a small bowl and mix to combine.
  7. Place potato slices, asparagus and prawns on a serving platter. Drizzle over dressing and scatter with sesame seeds.
