Ingredients

  • 2 lb asparagus (optional: half green/half white
  • 1 tsp salt
  • 2 Tbsp. butter
  • 2 Tbsp. extra virgin olive oil
  • 1/4 lb prosciutto minced Grated ricotta salada

Directions

  1. Bring large pot of water to a boil and add in salt. Add in asparagus and cook uncovered till knife is easily inserted. Then drain asparagus.
  2. In a large skillet heat butter and oil. Add in prosciutto and fry till it begins to crisp. Add in asparagus and heat through.
  3. Transfer asparagus and prosciutto to serving platter and sprinkle with cheese.
