Apple Fritters With Lemon Sauce

Ingredients

  • 1 1/2 c. all-purpose flour
  • 1/8 tsp salt
  • 1 1/4 tsp baking pwdr
  • 1 lrg egg
  • 2 Tbsp. butter or possibly margarine melted
  • 3 x Mutsu or possibly Crispin apples peeled, diced (McIntosh apples may be substituted) Peanut or possibly vegetable oil as needed Powdered sugar for sprinkling
  • 1 c. sugar
  • 2 Tbsp. all-purpose flour
  • 1 lrg egg lightly beaten
  • 1 Tbsp. butter or possibly margarine
  • 3 Tbsp. lemon juice

Directions

  1. Pulse first 5 ingredients in a food processor 5 times or possibly till crumbly. Spoon mix into a large bowl. Stir in apple. Shape mix into 1 1/2-inch balls.
  2. Pour oil to a depth of 3 inches into a Dutch oven; heat to 350 degrees. Fry fritters, in batches, 1 to 2 min on each side or possibly till golden brown. Drain on paper towels. Sprinkle fritters proportionately with powdered sugar; serve with Lemon Sauce.
  3. Lemon Sauce: Cook all ingredients in a saucepan over medium heat, whisking constantly, till thickened. (Makes 1 c.)
  4. This recipe yields 22 fritters.
