Apple Cider Bread

I have been cooking up a lot of recipes this month using apple cider and not wanting my last little bit to go to waste, I thought I would put it to good use. This was an easy recipe and it makes two loaves so you can eat one now and freeze one for later . . . . or not!

Ingredients

  • 1 cup butter, softened at room temperature
  • 1 1/2 cups sugar
  • 3 eggs
  • 4 cups flour
  • 1 1/2 tablespoons baking powder
  • 1 1/2 teaspoons salt
  • 2 1/2 teaspoons cinnamon
  • 2 cups apple cider
  • 2 cups apples, peeled, cored and chopped

Directions

  1. Preheat oven to 375 degrees. Spray and flour two loaf pans or 18 muffin cups. Cream butter and sugar with a mixer. Add the eggs and cream thoroughly. Combine the flour, baking powder, salt and cinnamon. Add this to the egg mixture. Mix. Add the apple cider one cup at a time. Combine. Stir in the chopped apples. Divide the batter between the two loaf pans. Bake 50 t0 70 minutes until a toothpick comes out clean. If you are making the muffins, they will need to bake 30-35 minutes.
