Almond & Chocolate Chips Butter Cake

This is a basic butter cake which I have taken the liberty to "dress" it up further with almonds and chocolate chips!

Ingredients

  • 140g castor sugar
  • 195g butter - cut in cubes (it should not be too soft or too hard)
  • 170g self-raising flour
  • 3 eggs
  • 3 tbsp milk
  • A pinch of salt
  • 1/2 tsp vanilla essense
  • 1/4 tsp baking powder
  • 15-20 pieces of almonds - roughly chopped
  • A few sprinkles of chocolate chips/rice

Directions

  1. Sieve the flour with the baking powder three times.
  2. Beat the butter to a cream and add sugar bit by bit to it and a pinch of salt.
  3. Add egg one at a time and continue beating.
  4. Fold in the sifted flour (not beat) and milk alternatively to get a good consistency.
  5. Add the vanilla essence and fold the mixture and throw a few sprinkles of chocolate chips and fold in.
  6. Pour the mixture on to a greased cake tin and top it with the almonds.
  7. Bake for 40 - 45 minutes at 160 - 170 degrees (or according to your oven).
  8. Note: The reason to fold the flour is to incorporate air and makes the cake rise, become soft & spongy!
