Ingredients

  • 1 1/20 c. self-raising flour
  • 1 tsp grnd nutmeg
  • 3/4 c. castor sugar
  • 1 c. flaked almonds toasted
  • 1 x lightly beaten egg
  • 11/20 c. lowfat milk
  • 3 ounce melted butter
  • 1/2 c. apricot jam

Directions

  1. Preheat oven to 375F, prepare pans. Sift flour & nutmeg into bowl, stir in almonds & sugar. Stir in combined egg, lowfat milk & butter, stir with a fork till just combined. Spoon half of batter into pans, put 2 level tsp. of apricot jam into each, top with rest of batter. Bake for about 30 mins or possibly till cooked.
  2. Makes 12. Suitable to freeze, not suitable to microwave.
