Belize-Style Red Beans & Rice

Ingredients

  • 1/2 lb Red kidney beans
  • 2 c White rice
  • 1 c Coconut milk thick
  • 1 Onion coarse chopped
  • 1/2 Green Bell pepper seeded & diced 1/4"
  • 1 Garlic clove minced
  • Salt & pepper to taste
  • 1/4 t Dried thyme

Directions

  1. Cover beans with water then soak overnight. Place beans in pot then add onions, bell pepper, garlic & enough water to cover barely.
  2. Bring to a boil.
  3. Cook until beans are tender & still whole. Add coconut milk & seasonings. Add rice to beans then cook over med-low heat until liquid is absorbed.
  4. Stir lightly with a fork then add some water if necessary & cook until rice is done.
