Zucchiniwiches
A healthy and very delicious side-kick for your Fall squash soup or any time you need to use up those zucchini from the garden. Ingredients
- 2 cups grated zucchini
- 1 cup grated carrot
- 1/4 cup grated or finely chopped celery
- 1/3 cup , lo-salt, lo-sugar peanut butter
- 1/3 cup Greek yogurt
- 8 slices whole wheat bread
Directions
- Combine zucchini, carrot, celery and yogurt. Spread peanut butter on four slices of bread.
- Top with vegetable mixture.
- Complete sandwich with another piece of whole wheat bread.
