    A healthy and very delicious side-kick for your Fall squash soup or any time you need to use up those zucchini from the garden.

    Ingredients

    • 2 cups grated zucchini
    • 1 cup grated carrot
    • 1/4 cup grated or finely chopped celery
    • 1/3 cup , lo-salt, lo-sugar peanut butter
    • 1/3 cup Greek yogurt
    • 8 slices whole wheat bread

    Directions

    1. Combine zucchini, carrot, celery and yogurt. Spread peanut butter on four slices of bread.
    2. Top with vegetable mixture.
    3. Complete sandwich with another piece of whole wheat bread.
