THREE ZUCCHINI (CAN USE 1 CARROT IN PLACE OF SOME OF THE ZUCCHINI FOR A SWEETER TASTE)

Ingredients

  • 3 CUPS ORGANIC ZUCCHINI, SHREDDED IN NINJA FOOD PROCESSOR
  • 1 ORGANIC ONION, CHOPPED IN FOOD PROCESSOR
  • 2 ORGANIC GARLIC CLOVES, PRESSED
  • 4 ORGANIC EGGS, BEATEN
  • 1 TABLESPOON ITALIAN SEASONING
  • 1/2 TEASPOON IODIZED SEA SALT
  • 1 TABLESPOON NUTRITIONAL YEAST FLAKES
  • 1/4 CUP FLAX SEED (USE EXTRA TO ABSORB EGG LIQUID)
  • 2 CUPS ORGANIC BREAD CRUMBS
  • 1/2 CUP ORGANIC WALNUTS OR PECANS
  • 1 CUP ORGANIC SHREDDED CHEESE (COTTAGE CHEESE CAN ALSO BE USED).
  • 2 TABLESPOONS SEASONED FLOUR & PANCO BREAD CRUMBS FOR THE EXTERIOR OF THE PATTY.

Directions

  1. PEEL THE ZUCCHINI AND SHRED IN NINJA.
  2. CHOP ONION IN NINJA AND ADD SHREDDED ZUCCHINI & GARLIC.
  3. IN SEPARATE BOWL, BEAT EGGS AND ADD SEASONINGS.
  4. ADD EGG MIXTURE AND REMAINING INGREDIENTS TO THE NINJA BOWL AND MIX.
  5. WITH AN ICE CREAM SCOOP, FILL WITH MIXTURE AND COAT WITH PANCO JAPANEESE STYLE BREAD CRUMBS AND SEASONED FLOUR.
  6. PUT PATTIES ON COOKIE SHEET AND BAKE FOR 15 MINUTES ON ONE SIDE. TURN PATTIES OVER AND BAKE AN ADDITIONAL 10 MINUTES UNTIL DONE.
  7. CAN ALSO BE FRIED IN OLIVE OIL, FOR 5 MINUTES ON EACH SIDE.
  8. GOOD EATEN WITH OR WITHOUT GRAVY OR IN A SANDWICH.
