  • Zucchini Nut Bread

    I make several loaves of this at a time when my zucchini comes in out of the garden. Just bake and freeze. Awesome!!! Makes 2 loaves.

    Ingredients

    • 3 cups unsifted all purpose flour
    • 2 tsp. ground cinnamon
    • 1 tsp. baking soda
    • 1 tsp. salt
    • 3/4 tsp. baking powder
    • 2 cups grated unpeeled zucchini
    • 1 tbsp. lemon peel, grated
    • 1 cup finely chopped walnuts
    • 1 cup raisins
    • 2 cups sugar
    • 1 cup salad oil
    • 4 eggs

    Directions

    1. Preheat oven to 350 degrees. Grease well and flour 2 (9X5X3) loaf pans.
    2. Sift flour, cinnamon, soda, salt and baking powder in medium bowl. Combine lemon peel, grated zucchini, walnuts and raisins in small bowl.
    3. In large mixing bowl, combine sugar, salad oil, and eggs with mixer till smooth.
    4. Add sifted dry ingredients.
    5. Add zuchinni mixture. Stir until combined.
    6. Pour batter into prepared pans (evenly).
    7. Bake 55-60 minutes or until tester comes out clean.
    8. Cool in pan 10 minutes (remove from pan)
    9. Cool on wire racks. Slice thin.
