Ingredients

  • 2 c. sugar
  • 1 c. oil
  • 3 beaten large eggs
  • 3 c. flour
  • 1 teaspoon salt
  • 1 T baking pwdr
  • 1 teaspoon cinnamon
  • 2 c. grated zucchini
  • 1/2 c. minced nuts

Directions

  1. Mix together sugar, oil, and large eggs. Sift together dry ingredients and then stir into sugar, oil and egg mix. Add in zucchini and nuts. Pour into greased loaf pan. Bake about 45 min to 1 hour in moderate oven (350 degrees). Makes two standard loaves. This bread can be frzn with good results.
