Zucchini Corn Casserole

A great vegetable dish. Easy to make and delicious!

Ingredients

  • 4 med zucchini, diced
  • 1 med red onion, diced
  • 16 oz package frozen corn
  • 16 oz shredded jalapeno jack or pepper jack cheese
  • 1 tsp olive oil
  • 1 tsp butter
  • salt and pepper
  • 1/2 c crushed tortilla chips (optional)

Directions

  1. Dice zucchini, put in skillet and cook in 1 tbls olive oil and 1 tbls butter until tender. Remove from pan.
  2. Dice med red onion and cook until translucent, remove from skillet.
  3. Put the frozen corn in skillet and heat until warm then add to zucchini and onion.
  4. Put zucchini, onion and corn in oven safe casserole dish. Add 1 1/2 cup jalapeno jack or pepper jack shredded cheese, mix well.
  5. Top with remaining 1/2 cup cheese and 1/2 cup crushed tortilla chips (optional)
