Zippy Zucchini Pie
Ingredients
- 4 c. thinly sliced zucchini
- 1 c. onion, minced fine
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon basil
- 1/4 teaspoon garlic pwdr
- 1/4 teaspoon oregano
- 2 T parsley
- 1 stick butter
- 2 large eggs
- 2 c. Mozzarella cheese, shredded
- 1 (8 ounce) pkg. quick crescent rolls
Directions
- Saute first 8 ingredients in butter. In a bowl, beat the large eggs with the Mozzarella cheese. Roll crescent rolls out in a 9x9 inch pie pan to create a pie shell. When zucchini is tender, add in to egg mix. Pour into pie shell and bake at 375 degrees for 20 min.
