Yogurt Spiced Chicken (Moroccan spiced)

Ingredients

  • 30 lbs raw chicken tenders
  • 2 cups lemon juice
  • 2 cups minced fresh ginger
  • 1 cup minced fresh garlic
  • 8 carton plain yogurt
  • 1 qt oil
  • 1/2 cup cumin
  • 1/2 cup hot sauce
  • 1 cup chopped cilantro
  • 1/2 cup brown sugar
  • 1/4 cup salt
  • 1/2 cup Worcestershire sauce
  • 1/2 cup turmeric
  • 2 Tbsp cinnamon

Directions

  1. Trim the chicken.
  2. Mix all other ingredients together; mix well.
  3. Marinate chicken in mixture overnight, or minimum of 4 hours.
  4. Sear off chicken on the flat top (first shake off any residual coating).
  5. Garnish pan with chopped cilantro and red pepper strips or dice.
