wok-fried prawns with soy sauce

- ingredients:
- 1/2 cup cooking oil
- 500g large prawns, back slit, deveined and marinated with 1 tbsp. sugar
- 3 cloves garlic, finely chopped
- 2-3 tbsps. light soy sauce
- 1 tbsp browns sugar
- 1tbsp caster sugar
- 1tbsp rice wine
- 1 tsp tapioca flour, mixed with 2 tsps. water (optional)
- garnishing:
- spring onions, sliced thinly
Directions
- in a wok, heat the oil over medium heat.
- when hot, wok -fry the prawnsuntil golden brown and fragrant.
- remove prawns and leave 3 to 4 tablespoons oil in the wok.
- saute the garlic until fragrant.
- add the semi-cooked prawn, light soy sauce and sugars.
- continue frying the prawns until they are cooked.
- add wine and adjust seasonings to taste.
- thicken the sauce with tapioca mixture, if using.
- remove and garnish with spring onions.
- serve immediately.
