  • Winter Salsa

    Ingredients

    • 1 28-oz can crushed tomatoes
    • 1 4-oz. can green chiles, chopped
    • 1 clove of garlic, chopped
    • 1/2 onion, chopped
    • 1 TBSP olive oil
    • 2 tsp. red wine vinegar
    • 1/4 tsp. dried oregano
    • 1/4 cup of very loosely packed fresh chopped cilantro
    • Salt
    • Freshly ground black pepper

    Directions

    1. Put green chiles, garlic, onion, olive oil, vinegar, oregano and cilantro in the bowl of a food processor.
    2. Process.
    3. Add in about 1/4 cup of the crushed tomatoes.
    4. Add salt and pepper to taste.
    5. Process.
    6. Add to remaining crushed tomatoes in a bowl and mix.
    7. Serve with chips.
    8. Refrigerate when not using.
    9. Will keep several days.
