Whole Wheat Pumpkin Cookies w/ Chocolate Chips

- 2 cups whole wheat pastry flour
- 1/2 cup quick cooking oats
- 3 Tbsp. flaxseed meal
- 2 tsp. cinnamon
- 1/2 tsp. ground cloves
- 1/2 tsp. sea salt
- 1 tsp. baking soda
- 1 cup canned pumpkin
- 3/4 cup sucanant
- 2 eggs
- 2 Tbsp. milk
- 1/4 cup + 2 Tbsp. coconut oil, melted
- 1 tsp. vanilla
- 1 cup chocolate chips
- 1/2 cup walnuts, chopped (optional)
Directions
- Preheat oven to 375°F.
- In medium bowl, combine flour, oats, flaxseed meal, cinnamon, cloves, salt, and baking soda. Set aside.
- In large bowl, combine pumpkin, sucanat, eggs, milk, coconut oil, and vanilla. Stir with wire whisk until sucanat is dissolved.
- Add dry ingredients to wet ingredients and mix with wooden spoon.
- Add chocolate chips and walnuts.
- Drop by rounded teaspoonfuls onto cookie sheet lined with parchment paper.
- Bake for 11-12 minutes. Let cool for 2 minutes before removing them from cookie sheet. Cool completely on wire rack.
