Ingredients

  • 1/3 c. hot water (105 to 115 degrees)
  • 1 pkg. dry yeast
  • 1 tbsp. honey
  • 4 c. whole wheat flour
  • 3 c. bread flour
  • 1/2 stick butter
  • 1 teaspoon salt
  • 1/4 c. honey
  • 1 1/2 c. ice water

Directions

  1. Stir yeast and honey into the hot water in a 1 c. measure and let stand for 5 - 10 min. Using a food processor process flour, butter, salt and 1/4 c. honey for 20 seconds. With machine running, pour the yeast mix in a slow steady stream as fast as the flour will absorb it. Add in ice water and process till the dough starts to clean sides of bowl. Process about 60 seconds. Shape into ball and place in bowl. Let rise to double bulk. Make into 2 loaves. Let rise about 45 min. Bake at 360 degrees for 35 to 40 min.
