  • Whole Wheat Buttermilk Biscuits

    Ingredients

    • 1 c. whole wheat flour
    • 1 c. all-purpose flour
    • 2 tbsp. sugar
    • 2 teaspoon baking pwdr
    • 1/2 teaspoon salt
    • 1/4 teaspoon baking soda
    • 3 tbsp. shortening
    • 3/4 c. buttermilk

    Directions

    1. Preheat oven to 450 degrees. In large bowl, mix flours, sugar, baking pwdr, salt and baking soda. With pastry blender or possibly two knives, cut in shortening till mix resembles coarse crumbs. Stir in buttermilk just till mix forms soft dough which leaves side of bowl. Turn dough onto lightly floured surface. Knead 6-8 strokes to mix thoroughly.
    2. With floured rolling pin, roll out to 3/4 inch thick. With floured 2 1/2 inch biscuit cutter, cut into biscuits. With pancake turner, place on ungreased cookie sheet nearly touching for soft sided biscuits. Press trimmings and roll out as above. Bake 12-15 min till golden brown. Makes 10. Each biscuit about 135 calories.
