White Chocolate Oatmeal Cookies
Taste Of Home - Edith Pluhar Crunchy and delicious !! Ingredients
- 1 cup butter, softened
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1 egg
- 3 tsp vanilla
- 1 tsp coconut extract
- 1 1/2 cups quick cooking oats
- 1 1/4 cups flour
- 1 tsp salt
- 1 tsp baking soda
- 1 cup flaked coconut, toasted
- 6 squares (1 oz each) white baking chocolate, cut into 1/2 inch chunks
- Additional sugar
Directions
- In a mixing bowl, cream the butter and both of the sugars
- Add the egg and both of the extract
- Mix well
- Combine the oats, flour, salt, and baking soda
- Gradualy add to the creamed mixture
- Stir in the coconut and the chocolate.
- Drop by tablespoonfuls 3 inches apart onto ungreased baking sheets
- Fl;atten with a glass dipped in sugar
- Bake at 350 F for 8-9 minutes or until golden brown
- Cool for 1 minute before removing to wire racks to cool
