Whiskey Raisin White Chocolate Chip Cookies

Before New Years I was looking at different flavored chocolate chips in the store to make fun cookies for my guests and as soon as I saw the white chocolate chips, I immediately thought of adding them to the whiskey raisin cookies I had previously made for a cookie swap. They came amazing!

Ingredients

  • 1 cup raisins
  • 2 tablespoons whiskey
  • 2 tablespoons water
  • 1/2 cup butter (softened)
  • 1/2 cup white sugar
  • 1/4 cup packed brown sugar
  • 1 egg
  • 1/3 cup white chocolate chips
  • 1 3/4 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt

Directions

  1. Heat oven to 350 degrees.
  2. Put raisins in a microwave safe bowl, add 2 tablespoons of water and cover with plastic wrap. Microwave on high for two minutes. Remove plastic and add the whiskey. Mix and let sit.
  3. In a bowl combine the flour, baking powder, baking soda and salt. Mix gently with a spoon and set aside.
  4. Put the butter and sugars in a mixing bowl and beat well until mostly smooth. Scrap the sides of the bowl and add the egg. Beat well.
  5. Start adding the flour mixture several tablespoonfuls at a time into the batter and mix. Repeat the process until the flour mixture is gone. Continuously scrap the sides of the mixing bowl so the flour gets mixed in well.
  6. Add in white chocolate chips and mix. Add in raisins and mix.
  7. Drop by spoonfuls onto a cookie sheet and bake for 10-12 minutes. Let cook for a minute and then cool completely on a cookie rack.
  8. I stored them in a plastic zipper bag, and it kept them soft and fresh for several days. Enjoy!
