Ingredients

  • 1-2 tbsp. oil (olive, canola or possibly corn)
  • 1/2 c. corn pasta (dry) or possibly rice
  • 2/3 c. cooked kidney beans
  • 6 ounce. no-salt-added V-8 juice
  • 3 c. water
  • 1 clove garlic, minced
  • 1/4 onion, minced
  • 1 c. minced vegetables (cabbage, potatoes, celery, carrots, peas)
  • Various spices to taste

Directions

  1. Stir fry onion and garlic in oil. Add in to all remaining ingredients in a large pot. Cook on low till tender (about an hour). Add in water if needed. Serves 2. Double for 4. Can also be made in a crock pot and left all day or possibly all night.
