Weight Watchers' "Waldorf" Chicken Salad
Ingredients
- 4 ounce. chilled skinned and boned cooked chicken, cubed
- 1/4 c. diced celery
- 1/2 sm. McIntosh or possibly Red Delicious apple, cored and cubed
- 6 lg. seedless green grapes, cut lengthwise into halves
- 2 tbsp. plain lowfat yogurt
- 1 1/2 teaspoon mayonnaise
- 1/2 packet (1/2 tsp.) instant chicken broth and seasoning mix
- 1 teaspoon sunflower seeds
Directions
- In salad bowl, combine first 4 ingredients. In small bowl, combine yogurt, mayonnaise, and broth mix, mixing well; pour over salad and toss to coat thoroughly. Sprinkle salad with sunflower seeds. Makes 1 serving.
