Warm Spiced Lentils
This is a great, heart healthy recipe that is great served over brown rice and accompanied by a salad or a coleslaw. Ingredients
- 1 cup green lentils
- 1 small onion peeled- whole studded with 4 whold cloves
- 2 bay leaves
- 1 2" lemon rind strip
- 1 T olive oil
- 3/4 cup chopped red onion
- 1 cup chopped tomato
- 3/4 tsp ground ginger-- I use freshly grated ginger root
- 3/4 tsp cumin
- 1/2 tsp turmeric
- 3 cloves garlic
- 1/4 cup cilantro
- 3 TBSP parsley
- 1 1/2 TBSP lemon juice
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp paprika
- 1/8 tsp ground red pepper
- 8 lemon wedges
Directions
- Put lentils, studded onion, bay leaves and lemon rind in pot--cover with water. Cook coverd for 20-22 minutes. Drain, discarding seasonings.
- Saute red onion. Stir in next 5 ingredients. Cook 2 minutes. Stir in remaining ingredients.
- Serve with a lemon wedge.
