  • Warm Spiced Lentils

    This is a great, heart healthy recipe that is great served over brown rice and accompanied by a salad or a coleslaw.

    Ingredients

    • 1 cup green lentils
    • 1 small onion peeled- whole studded with 4 whold cloves
    • 2 bay leaves
    • 1 2" lemon rind strip
    • 1 T olive oil
    • 3/4 cup chopped red onion
    • 1 cup chopped tomato
    • 3/4 tsp ground ginger-- I use freshly grated ginger root
    • 3/4 tsp cumin
    • 1/2 tsp turmeric
    • 3 cloves garlic
    • 1/4 cup cilantro
    • 3 TBSP parsley
    • 1 1/2 TBSP lemon juice
    • 1/2 tsp salt
    • 1/4 tsp pepper
    • 1/2 tsp paprika
    • 1/8 tsp ground red pepper
    • 8 lemon wedges

    Directions

    1. Put lentils, studded onion, bay leaves and lemon rind in pot--cover with water. Cook coverd for 20-22 minutes. Drain, discarding seasonings.
    2. Saute red onion. Stir in next 5 ingredients. Cook 2 minutes. Stir in remaining ingredients.
    3. Serve with a lemon wedge.
