  • Vodka Bruschetta

    A Really Yummy vodka bruschetta that makes them just disappear in seconds.

    Ingredients

    • 5 Tbsp virgin olive oil
    • 1 french baguette, cut into 3/4 inch slices
    • 6 plum tomatoes - finely chopped
    • 2 small scallions - finely chopped
    • 4 Tbsp Green olives - finely chopped
    • 1/2 Cup Basil Leaves - finely chopped
    • 3 tbsp Vodka - I like to add extra
    • 1 tbsp vermouth
    • 1 tsp black pepper
    • 1 tbsp kosher salt
    • 2 - 3 garlic cloves

    Directions

    1. warm 3 tbsp of olive oil in a large skillet over moderate heat.
    2. Gently fry bread slices until golden brown. Combine and mix the rest of oil with tomatoes, scallions, green olives, basil, vodka, vermouth, black pepper and salt. Cover and set aside.
    3. Bruise the garlic and rub onto each toast. Discard garlic, add spoonful of tomato mixture.
    4. Serve and watch them disapear!
