Very Strawberry Cheesecake
Ingredients
- 1 1/2 c. vanilla wafer crumbs
- 1/4 c. butter, melted
- 1 env. unflavored gelatin
- 1/4 c. cool water
- 2 (8 ounce.) Packages cream cheese, softened
- 1 tbsp. lemon juice
- 1 teaspoon grated lemon peel
- 1 (7 ounce.) jar marshmallow creme
- 1 (8 ounce.) container whipped topping, thawed
- 2 c. fresh sliced strawberries
Directions
- Combine crumbs and butter; press onto bottom of 9-inch springform pan. Chill. Soften gelatin in water; stir over low heat till dissolved. Gradually add in gelatin to cream cheese, mixing at medium speed till well blended. Blend in juice and peel. Beat in marshmallow creme, mix in whipped topping. Puree strawberries; fold into cream cheese mix. Pour over crust. Refrigeratetill hard.
