    Vegetarian Quinoa Muffins

    If you don’t know what to do with quinoa, then why not try and make quinoa muffins? They are perfect for breakfast or enjoyed as snacks! Their preparation is pretty simple and the best thing is they can be eaten warm or cold. I personally prefer them warm. What about you?

    Ingredients

    • 2 Carrots
    • 1 Onion
    • 1 Pepper
    • 100g Quinoa
    • 100g Cheddar Cheese
    • 2 Eggs
    • Dried Oregano
    • A handful of Fresh Parsley
    • Salt to taste
    • 2 Tablespoons yoghurt
    • Unsalted Butter

    Directions

    1. Cook the quinoa seeds in lightly salted water for about 15 minutes (or according packet instructions).
    2. Meanwhile:
    3. Melt the butter in a frying pan, add sliced onion & pepper. Peel the carrots. Use the peeler to get nice thin slices, add them in the pan. Sautee for about 10 -15 minutes.
    4. While the vegetables are sautéing, in a large bowl mix two eggs with 2 tablespoons of yoghurt until well blended. Add grated cheese, dried oregano, finely chopped parsley and mix well.
    5. Drain the quinoa seeds, let them cool a bit and add to the bowl.
    6. Add the sautéed vegetables. Mix well.
    7. Line your muffin tin with cupcake paper cases, fill each case with the mixture (fill to the top or a bit more).
    8. Place in a preheated oven and bake at 180°C for 20 minutes.
    9. Serve for breakfast, as a snack or at your party!
