    Vegetarian Nachos is a quick 15 minute recipe for a delicious appetizer or snack. Ingredients include veggie crumbles, shredded cheese, tomatoes, peppers and salsa with tortilla chips.

    Ingredients

    • 1 cup frozen ground veggie crumbles, (Such as: "Boca" brand)
    • 1/4 cup thick & chunky salsa
    • (14) no-salt-added tortilla chips (2 oz)
    • 2 tbsp 2% Mexican style finely shredded four cheese blend
    • 1/4 cup chopped tomatoes
    • 1 tbsp chopped jalapeño peppers

    Directions

    1. Cook the crumbles and salsa in a nonstick skillet over medium heat 5 minutes or until crumbles are cooked through (160º F.), stirring occasionally.
    2. Place 7 chips on each of 2 plates plates. Top each plate with 1/2 crumbles mixture and 1/2 remaining ingredients.
