- 1 cup frozen ground veggie crumbles, (Such as: "Boca" brand)
- 1/4 cup thick & chunky salsa
- (14) no-salt-added tortilla chips (2 oz)
- 2 tbsp 2% Mexican style finely shredded four cheese blend
- 1/4 cup chopped tomatoes
- 1 tbsp chopped jalapeño peppers
Directions
- Cook the crumbles and salsa in a nonstick skillet over medium heat 5 minutes or until crumbles are cooked through (160º F.), stirring occasionally.
- Place 7 chips on each of 2 plates plates. Top each plate with 1/2 crumbles mixture and 1/2 remaining ingredients.
