    With the increased interest in vegetarian and vegan diets in recent times, you will find more and more recipes calling for vegetable broth instead of, or as alternative to, the more traditional meat broths. Vegetable broth can be used in all of the same ways as meat broths, although I find that it is particularly apt for making risotto. To my mind, it is less successful in clear soups. I always begin with the usual aromatics--onion, carrots and celery--but you can vary the other vegetables according to the season and your mood.

      I've never made vegetable broth before, but it seems like a great idea to use up any leftover veg.

        Thank you so much for this! You provided lots of detail about what veggies to avoid/limit...that's going to be very helpful for me. Also, I liked the idea that one reader posted to your blog about throwing in a few husked and shucked sweet corn cobs...what a way to get the most out of the least. I've never done anything with empty corn cobs but throw them away!
