Tzatziki

- 6-8 ounces plain Greek yogurt
- 6 inch piece of cucumber, peeled and thickly grated
- 1 or 2 garlic clove, crushed
- 1 tablespoon olive oil (optional)
- 1 tablespoon finely chopped fresh mint
- Zest and juice from 1/2 lemon
- salt
Directions
- Strain yogurt. I use a coffee filter in a fine mesh strainer.
- After you grate cucumbers, strain the cucumbers by either placing them in a coffee filter in a fine mesh strainer or putting them in a towel and wriging it out.
- Put the strained yogurt in a bowl and add the cucumber and mix.
- Add the garlic, olive oil (if using), mint, lemon juice, zest, and salt. Mix well.
- Cover with plastic wrap and chill lightly.
