Tuscan style tuna salad
This is so delish I made it for my friends @ work we always eat together and each of bring something healthy and delish I've been lookng for some other way to make tuna and I got lots of raves for this Ingredients
- 2 6 oz cans tuna in water drained
- 1 15 oz can white beans rinsed
- 10 cherry tomatoes quarted
- 4 scallions trimmed and sliced
- 2 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- 1/4 tsp salt I use sea salt
- Black pepper to taste
Directions
- Combine tuna ,beans ,tomatoes ,scallions ,oil and lemon juice in medium bowl stir gently cover and refrigerate can serve this in pita bread I used whole wheat .or with crackers of your choice
