Turkey Stuffed Baked Peppers

They reminded us of a turkey meatball in a pepper. I would add some red pepper flake in these to give them a bit of zing next time. We have already planning our next batch of these doing a Mexican version. Replacing the Italian seasoning with cumin and chili powder and the pasta sauce with fresh salsa. I will post once we make them! Ingredients
- 4 bell peppers, medium size
- 1 lb ground turkey breast
- 1 cup cooked quinoa
- 3 egg whites
- 1/2 cup chopped scallion
- 2 tbsp ItalianSeasoning
- 2 tsp garlic powder
- 2 tbsp chopped garlic
- 1 tsp sea salt
- 4 tbsp pasta sauce (preferably no sugar added)
Directions
- Preheat oven to 350 degrees F.
- Cook the quinoa if you have not prepared.
- Cut bell peppers in half and remove the seeds.
- In a large bowl, combine the raw turkey, cooked quinoa, egg whites, scallion and seasonings plus 1 tbsp of tomato sauce. Mix well.
- Stuff each pepper half with approximately 1/2 cup of the mixture. Top with remaining sauce divided evenly among each half.
- Bake for 45 minutes on a lined sheet pan and serve.
- 1 serving is 2 pepper halves or 1 whole pepper.
