  • Turkey Stew with Vegetables

    This is a simple Turkey stew. Super easy and quite tasty!

    Ingredients

    • 2 Tbsp butter, 2 Tbsp Olive Oil
    • 4 onions, chopped
    • 2 celery stalks, chopped
    • 4 carrots, peeled and sliced (about 1/2 inch thick)
    • 4 potatoes peeled and cut into 1 inch cubes
    • 1/3 cup all purpose flour
    • 6 cups chicken stock
    • 1 Tbsp soy sauce
    • 1/2 tsp dried marjoram
    • 1.5-2 pounds of turkey breast, cubed
    • 2 green bell peppers and/or 2 zucchini, diced

    Directions

    1. Melt butter and oil in a large stew pot over medium heat. Place onions in pot and saute till tender, about 4 minutes. Stir in celery and carrots, and cook until tender. Stir in potatoes and flour. Pour in chicken stock and soy sauce. Add marjoram. Place turkey in pot and bring to a boil. Reduce heat to low, cover, and simmer 30 min.
    2. Mix the green pepper and/or zucchini into the pop and continue cooking 10 minutes.
    3. Taste and adjust for seasoning.
