  • Turkey Meatloaf

    Ingredients

    • 12 lbs ground turkey
    • 1 cup garlic, minced
    • olive oil as needed
    • 1 lb Spanish onion, peel and dice
    • 1 lb celery, wash, peel stalks, dice
    • 1 qt applesauce
    • 3 cups sage, fresh, remove from stems, chop
    • 2 cups thyme, fresh, remove from stems, chop
    • 1 1/2 qts cornbread, stuffing cubes- make a day in advance
    • 1 1/2 qts yogurt, low-fat
    • 1 cup egg whites
    • 1 cup salt
    • 1/2 cup pepper

    Directions

    1. Preheat oven to 345 degrees F. Spray the mold pan with nonstick spray and set aside.
    2. Heat oil in a large skillet over medium heat, or in tilt grill. Add the garlic, onions, and celery. Cook until softened, about 5 minutes, stirring occasionally.
    3. Transfer the vegetables to a large bowl. Add the remaining meatloaf ingredients and mix well, but do not over mix.
    4. Place the meatloaf mixture in the prepared ring molds. Invert ring mold on to sheet pan. Form meatloaf with wide spatula (dipping the spatula in water), sealing any holes or cracks in the loaf.
    5. Place meatloaf in oven and cook until internal temerature is 150 degrees. Remove meatloaf from oven and let cool for approximately 15 minutes.
    6. Slice, and pan-up meatloaf, garnishing with aujus and chopped parsley.
