  • Tropical Shrimp Salad With Avocado

    Ingredients

    • 12 large cooked pink shrimp
    • 3 hearts of palm
    • 1 tomato
    • 1 avocado
    • 1 thick slice of fresh pineapple
    • ½ mango
    • 2oz (50g) of raisins
    • 2/3 ounce (20g) de pine nuts
    • ½ C (10cl) of cream
    • 1tsp (4cl) of rum
    • Juice of ½ lemon
    • 1 tbsp of mustard
    • Salt and pepper

    Directions

    1. Pour rum in bowl and add in raisins
    2. Let raisins soak in rum during preparation time
    3. Cut avocado in 2 pcs
    4. Mash one half with a fork
    5. Add in mustard, heavy cream and lemon juice to the mashed avocado
    6. Combine till sauce is very creamy
    7. Salt and pepper
    8. Finish by adding the other half of the avocado cut into small cubes
    9. Cut the mango, tomato, pineapple and hearts of palm into small cubes (diced)
    10. Put all into a salad bowl
    11. Add in shelled shrimp
    12. Sprinkle coarsely minced pine nuts over mix
    13. Pour avocado sauce over mix
    14. Add in raisins which have marinated in rum
    15. Mix well and correct seasoning if needed.
