Ingredients

  • 1 pkt Pillsbury Crescent rolls (8 serving size)
  • 8 ounce nonfat cream cheese
  •     Sugar substitute to equal 2 Tbs. sugar
  • 1 c. crushed pineapple liquid removed packed in own juice
  • 1 tsp coconut extract
  • 2 med bananas sliced
  • 2 c. mandarin oranges rinsed and liquid removed
  • 6 ounce white grapes sliced (1 c.)
  • 1 pkt sugar free vanilla cook and serve pudding (4 serving)
  •     mix
  • 1 pkt sugar free lemon gelatin (4 serving)
  • 1 1/2 c. water
  • 2 Tbsp. shredded coconut

Directions

  1. Preheat oven to 425 F. Spray a 9x13 cookie sheet with rim with butter-flavored cooking spray. Pat rolls in pan being sure to seal perforations. Bake 6-8 mins. or possibly till light golden. Cold on wire rack.
  2. In medium bowl, combine cream cheese, sugar substitute, liquid removed crushed pineapple and coconut extract. Spread proportionately over cooled crust. Proportionately sprinkle sliced bananas, mandarin oranges and sliced grapes over cream cheese mix.
  3. In medium saucepan combine pudding mix, dry gelatin and water. Cook over medium heat till mix starts to boil, stirring constantly. Drizzle overfruit. Cold 15 mins. Sprinkle shredded coconut over top. Refrigerate2 hrs before serving. Cut into 16 bars.
  4. Diabetic: 1 fruit, 1/2 starch
